Southern people can kill a pie! Have you ever gone into one of those little hole in the wall diners down south and ordered a slice of pie? Woo
wee! You’re talking about something special. I want to kill a pie like that! So, since Easter is right around the corner, I thought the most perfect pie to kill would be a coconut pie.
So with my copycat brain, I started looking for a good old fashioned Southern pie to duplicate. I found many, but it took me
awhile to come across one that I’d like to add to my fakery. I put my nose into the coconut so that I could really get the smell in my nose. I could smell the sugar in the bag of shaves. Then I went into dream mode, ‘If I wanted to make a delicious Southern pie that was completely inedible, what would that pie look like?’ I went back to looking for a good model. Finally, I found a Southern Coconut Pie that looked good enough in the picture for me to taste from my computer. I found this pie and its recipe on Southern Living.
I read the recipe to absorb all of the elements that make up this wonderful pie, and I started
on a fake coconut pie right away. I wanted to change the crust a bit so that it had my own touch, but the other elements, I wanted to resemble the Southern Living example. Each pie has to look enough like the real thing to be used as a display. My first attempt ended up with a bit more fluff than the one I have below, but I resolved on something that looked like what you’d get when you go to one of those little diners. If I were to go into a diner and look at the pies in the showcase, I’d see something a little more like this one I created. It’s very simple, but you know it’s going to be magnificent when you get into it, and this pie smells some kind of fabulous! You can smell all of the sugary coconut, the creaminess, and butter combined to make it a very coconutty delight. I just put it in my kitchen, and it’s a wonderful greeting. What do you think?
